Amarula Cream Liqueur brings unique flavor of South Africa to New Orleans Events

A Taste of South Africa is coming to New Orleans as the city salutes the 10th anniversary of South African democracy with special cultural exhibits and activities in conjunction with the New Orleans Jazz and Heritage Festival, April 23-25 and April 30-May 2, 2004.

South African Chef Tracey Williams has packed her native recipes featuring Amarula Cream Liqueur and is bringing unique desserts and pastries to the New Orleans celebration that includes visits from South African artists, musicians, artisans and other cultural and governmental delegates.

Among her creations, Chef Tracey will be preparing Amarula-flavored versions of New Orleans favorites: Crème Brulee and chocolate-covered Ponchatoula Strawberries.

“We’re excited to help people understand more about South Africa and its culture,” said Chef Tracey. “Nowhere is food and beverage more enjoyed than in New Orleans, and we hope our recipes are good ambassadors.”

Amarula is often described as “South Africa in a bottle.” Its unique flavor is derived from the fruit of the Marula tree, which grows wild on the veldt and only in South Africa. When fermented and combined with fresh South African cream, the resulting liqueur is a local favorite as a cocktail or as key ingredient in a variety of flavorful pastries and desserts.

A series of South African-themed events is scheduled during the during the two weekends of JazzFest, including activities at the South African Pavilion which will feature a stage for performances and presentations, plus exhibits of arts and crafts from approximately 50 South African artisans. South African Airlines, the South African Department of Arts and Culture and NOSACONN present the South African Pavilion at Jazz Fest.

In addition to activities at the Festival, other citywide events are planned in conjunction with the South African visit and freedom celebration including a parade on Freedom Day, April 27th.

Freedom Day is the anniversary of the first democratic elections in South Africa, April 27, 1994.

 

 

Dessert Recipes


Amarula and Chocolate-covered Strawberries

1 12-ounce package of semisweet chocolate chips
¾ cup half and half cream
1 to 2 tablespoons Amarula
60 large, fresh strawberries, rinsed and patted dry with stems left intact

Directions:

In the top of a double boiler, over hot water, slowly melt chocolate. Add cream, stirring until smooth. Remove from heat and blend in Amarula until completely mixed into chocolate.

Hold each berry by stem, swirl in chocolate to partially cover; place onto wax paper-lined cookie sheet. Place in refrigerator until chocolate is set; transfer fruit onto a serving platter to serve.

Amarula Crème Brûlèe

2 3/8 cups heavy cream
1 tsp vanilla extract
1 cinnamon stick
8 medium egg yolks
3/8 cup Amarula
3/8 cup sugar

Directions:

Pre-heat oven to 300 degrees. In large bowl, mix together egg yolks and sugar until sugar has been dissolved and the mixture is thick and pale yellow. Add cream, Amarula and vanilla. Continue to whisk until well blended. Strain into a large bowl, skimming off any foam or bubbles.

Divide the mixture into six ramekins. Place the ramekins in a water bath and bake until set around the edges, but still loose in the center, about 50-60 minutes. Remove from oven and leave in the water bath until cooled. Remove cups from the water bath and chill for at least 2 hours, or up to 2 days. When ready to serve, sprinkle about 2 teaspoons of sugar over each custard. For best results, use a small handheld torch to melt the sugar.
Or, place the ramekins under broiler until sugar melts.
